I would like to apprentice with someone who chisels inscriptions (like
donor names) into marble walls of museums, churches, etc. Are there
schools or institutions in New York or New England where I can learn
to do this?

Most modern stone engraving is done by machines like a CNC Engraver.

Have a look in your local yellow pages for Monumental Masons (or
Memorials and Headstones, which is what they make).
