Hello James,
I've reviewed your earlier questions on this topic, and I must say,
that other than the articles and information sources that have already
been provided to you, there does not seem to be a great deal of
literature, in English, that specifically address Vastushastra in
restaurants.
There's plenty of information on Vastushastra itself, as I'm sure
you're aware, but not very much that focuses on restaurant design.
I have found a few mentions that may not have come to your attention
yet, such as these two from newspaper articles:
--"...Aware of Surendran's feng shui/vaastu expertise in movies, homes and
offices, a Chinese restaurant in Bangalore last year followed his advice
on changing its interior and furniture."
--"The Vastu-Sastra not only helps in the positioning inside the homes but
also in work places, business centres, offices, restaurants, hotels and
everywhere..."

There is a web site I located that contains specific Vastu
recommendations for restaurants, including:
--square or rectangular layout
--kitchen in the southeast
--storage areas in the southwest
--cashier facing north or east
etc.

There are also a number of books on Vastu shastra, but I do not have
access to the full texts, and cannot offer any insight as to whether
they specifically discuss Vastu in restaurants. Some of the books
are:
Practical Vastushastra by Acharya Satyanand
and
Secrets of Vastushastra by N.H. Sahasrabudhe, R.D. Mahatme
