My wife says that she would love to have the sausage that Pizza Hut or
Dominos use on their pizza. That is not exactly our question (request,
though not a bad idea).

I am sure that most of the Italian sausage has as its main ingredient
lean ground pork. What cuts could make a difference.

Obviously the key to great tasting Italian sausage is the spices and
quantities of spices used.

Please find us one or two great Italian sausage recipes. We do not
want to make the "weiner" kind of sausage, just the little balls you
put on pizza.

Hi John,

The following are some recipes for Italian sausage especially made for pizzas.


ITALIAN STYLE SAUSAGE FOR PIZZA

Ingredients:

2 pounds ground pork
1 teaspoon ground black pepper
1 teaspoon dried parsley
1 teaspoon Italian-style seasoning
1/2 teaspoon garlic powder
1/8 teaspoon crushed red pepper flakes
3/4 teaspoon crushed anise seeds
1/2 teaspoon paprika
1/2 teaspoon dried minced onion
2 teaspoons salt

Instructions:

In a small bowl, combine the ground black pepper, parsley,
Italian-style seasoning, garlic powder, crushed red
pepper flakes, anise, paprika, minced onion flakes and salt; mix well.
Place pork in a separate large bowl and add the spice mix to it. Mix
this thoroughly with your hands.
In a large skillet over medium high heat, saute the seasoned pork for
10 minutes, or until well browned and crumbly.

1 lb lean ground pork
1 1/2 ts salt
3 1/2 ts paprika
2/3 ts garlic powder
1/3 ts fennel seed
1 ts black pepper
1/4 ts red pepper, crushed

Instructions:

Mix all ingredients except for the pork in a small bottle or dish.
Sprinkle on pork and mix in to blend evenly.
Mix sausage several hours or a day before using.

Here's one that has both pork and turkey in it:

SPICY SAUSAGE FOR PIZZA 

Ingredients:

1 Pound Ground Turkey
1 Pound Ground Pork
1/2 Cup Dry Red Wine
1/3 Cup Minced Parsley
2 Tablespoons Parmesan Cheese, grated  
1 Tablespoon Fennel Seeds
1 1/2 Teaspoon Crushed Red Pepper
1/4 Teaspoon Dried Thyme
1/4 Teaspoon Black Pepper
4 Garlic Cloves, crushed  

Instructions:

Combine all ingredients in a large skillet. Brown until the meat is
done. Drain. Freezes well. Makes 5 Cups

Great work, rainbow! That turkey one sounds really interesting.

In my experience, one thing that helps to make a pizza sausage extra
tasty is fennel. I add extra fennel when I make Italian sausage.
Plenty of freshly-chopped garlic, too. Fortunately, my husband eats it
with me, so he's still willing to kiss me. ;-)

"Hinojo" is fennel in Spanish.

Note also that the first recipe has anise seeds, which have a similar
flavor to fennel seeds.  I think fennel seed is the more traditional
though, and I agree it is one of the keys to great Italian sausage (of
the pizza variety - Italy actually produces a great many additional
sausages, some of which are also commonly referred to as Italian
sausage, others by other names).
