I am in the market for a new garage door that opens like a pocket
door, or elevator doors.  It would have to be in made of alminum or
wood, of course.

I use my garage as a workspace and want a door to open up to maximize space.

I'm confused. In your question's title you say you want a door that
opens vertically. Elevator doors and pocket doors open horizontally.

Many mini-storage sheds use doors which roll up in a tight bundle
above the opening.  They take a small space, and the cost is
reasonable.  They are available from most building supply stores.

I guess they would open horizontally.  My thinking was based on the
separate panels that would make up such a door would have to oriented
vertically.  So my mistake, a garage door that opened horizontally is
what i am looking for.

Wow, so close i can taste it!

I dont mind if the doors stack up behind each other and cover one side
of the garage opening (like 4 feet).  I guess think of japanese
screens and how they fold in front of each other.

I'm still looking for a Manufacturer that makes Bi-Fold Garage Doors
which opens Horizontally instead of Vertically.

I think I know what you are saying.  When the door is open it hangs
down from the ceiling, giving you about 7' of headroom.  Not enough
when working with lumber and larger items.  Standard vertical doors
can be installed so that they are tight to the ceiling when opened. 
That might be a cheaper, more main steam solution.
