How can I sort on a column of Dates in QuattroPro?

Specifically what format must the date fields be in? mm-dd-yy, mm-dd-yyyy, etc?

There is an option which will help you achieve this.

Database > Sort > 

- then choose how would you like to the sorting to be done
- then select whether you want it to be ascending or desc.

And that should do the job. Make sure to select the block you would
want to sort. Date field can be in any format. Let me know if you have
any questions to clarify. This should work with most of versions of
QPro DOS/WINDOWS
