Why is silverside (corned) beef silver? I'm interested in knowing what phenomenon causes the strange shimmery layer on it. |

It has to do with refracting light due to the presence of fat and water on the surface (think of a bit of motor oil spilled in a rain puddle - you can see the same effect).
