Hi brinsmom,

A synonym for Stachys tuberifera is Stachys affinis which is commonly
known as Chinese artichoke.

Here is a description of this plant:

"White to pink flowers and edible tubers, for which it is commonly
cultivated in the Orient. One of the few members of the mint family to
have tubers. While it spreads rapidly through these tubers, they are
quite shallow and easy to dig. They have a mild sweet flavor, and the
texture of water chestnuts."

Please let me know if this is the plant you are looking for and I will
give you details of where it can be purchased.

Regards,
Rainbow
