Digidesign makes a wide wide variety of software, all of which is very
good.  MIDI implimentation isn't incredible, but is certainly good for
most things, especially if you aren't making electronic music,
certainly acceptable for hip hop, rock, etc.  I believe ProTools/LE is
available for free from their website.  As far as recording and stuff
goes, ProTools is *the* standard recording software in the music
industry.  Their hardware interfaces vary greatly as well, and again,
they are all top notch.  Setups start around $500 for a PC-based
interface and go up to tens of thousands of dollars for a standalone
ProTools interface.
