I want to develop a booking engine (not a web site). Where do I get
more information about airline databases and Global Distribution
Systems? Are there any books/tutorials/training available?

It sounds like you want to build something to compete with Sabre. Good luck.

Start with www.sabre.com. This is the backend that just about everybody uses.
