What is the name of the story that tells of lollypop skies? I believe
this story is narrated by a character who is a gardner of some sort.

Based on your description, I believe the book you are seeking is
entitled "Henry in Lollipop Land". In a dream visit to Lollipop Land,
Henry meets lollipop flowers, tastes lollipop trees, and imagines
painting lollipop skies. Henry grows up to "grow" lollipops himself,
becoming a lollipop maker.

From an expired online auction description: [Henry and the Lollipop
Maker is a] "Cute story that has Henry wondering what should he be
when he grows up, a Doctor, a Policeman? When Henry falls asleep the
trees turn into lollipops, and tell him what fruits they are made out
of. Henry decides when he wakes up that he will make lollipops when he
grows up, to make the Doctors, policemen, the firemen, all happy. "

My childhood memories of this book are nearing the half-century mark,
but I managed to find it in a pile of books at a baby exchange store,
back in the 1980's, for my own child. It became one of her favorites,
as well.

Henry in Lollipop Land was written by Carl Anderson, and published by
Wonder Books in 1953.

I've located an a copy of Henry in Lollipop Land available for $22.50.

It took a bit to coax this one out of my memory. I tried various
combinations of search terms like "lollipop man", henry, "golden
books", "little golden books", "wonder books" and finally saw the
correct title mentioned in one of the results descriptions. Then I
searched on:
