I am looking for airlines that fly between Nice and Paris
or Cannes and Paris.  It needs to be inexpensive.

Also, I am looking for a charming hotel or b&b in a village
Cote du sur, France.  Suggestion Sept 3-5 2004

Sorry, I was unable to find a village called "Cote du sur." Are you
looking to stay in a village in Cote d'Azur?

Hello Debravalle-ga,

I'm assuming you meant Cote d'Azur, so that's what I pulled my information on. 

As far as a flight between Cannes and Paris, I could find none
available around your date range. Here is a link to the Cannes
Airport.
If you would like to search of your own accord, the code for the
Cannes airport is Cannes, France (CEQ-Mandelieu) and Paris is Paris,
France (PAR-All Airports).

Now, it seems Nice is the airport that does flights between itself and Paris. 
If you do a search on http://www.expedia.com leaving from Nice, France
(NCE-Cote D Azur), and to your destination of Paris, France (PAR-All
Airports), you see that Air France offers the flights your looking
for. Tickets when I searched were approx 398.00 One way.

As far as lodging, I found a number of gret places for you to stay in that area.

The Cote d'azur Hotel Provence seems to be very nice, however, their

My understanding is that there are smaller operating airlines offering 
shuttle services between Nice and Paris at discounted rates.  We would
need a one-way flight.  

$$398 is more than we want to spend. Next alternative would be to take the
Fast Train from Provence to Paris.  Which cities?  for the most direct route?
Aix? Cannes? Nice? Marseille...and how long does it take?

Hello again,

I have found some more information regarding flights. 

The UK-based easyJet leads the pack with the following routes:
Marseille to Paris Orly
Nice to Paris Charles de Gualle/Amsterdam/Bristol/Geneva/Liverpool/London
Paris Charles de Gaulle to Nice/London/Liverpool/Newcastle
Paris Orly to Marseille/Nice/Toulouse/Barcelona/Geneva/Milan.

I checked flights from Nice to Paris in your time frame, and it ran
anywhere from 30.00 to 50.00 Euros.

You can also use this site http://www.aeroport.fr/ to locate local
airports and check if they offer flights. I tried the flight search on
their site, and it seemed to be down, so I can not give you a result
for price.
