I eat about one pound per week of chopped mild chedder cheese which we buy in 4 pound bags, and freeze most of it. Wife buys a 10 ounce brick weekly of sharp chedder, typically Kraft or Cracker Barrel brand, occasionally the store brand sharp cheder. Traditional cheeses are essential to pizza and some Itallian dishes; otherwise most Americans under age 70 prefer the cheap (1/2 the retail cost)american cheese (not traditional) served on McDonald's cheese burgers. As the older generation dies out, and/or becomes too senile to notice, traditional cheese consumption will continue to decline,even if the price drops a bit. Likely first world countries will follow the USA with about a ten year delay. Sorry, I have no idea on questions 2 though 4. Neil |
