Where can I find a detailed calendar for a spraying schedule
recommended for growing organic apples?

I found a few schedules for you on the Web.  They tend to be region-specific.

The Rodale Institute's New Farm site has three sample spray schedules
for organic apple production in the Northeast.

This page from the Ohio Agricultural Research and Development Center
of the Ohio State University has "A Suggested Fungicide Spray Schedule
for Organic Production Systems In Ohio."  It says "Organic growers
must understand that it may not be feasible to use 'organic'
fungicides on a strict calendar schedule with a precise number of days
between sprays."

Unless you are talking about spraying warm soapy water I doubt you can
find anything since organic apples do not get sprayed (hence the term
organic)

Organic apples may be sprayed with a variety of organic-approved
substances, including horticultural oil, and copper or sulfur-based
fungicides, in addition to numerous home-made insecticides using
garlic and hot pepper, et al.  A tea made of horsetail (equisetum) can
also be sprayed as a preventative for fungal infections.
