Dear mmaguire-ga,
Thank you so much for this interesting question. I had never heard of
this vegetable previously, so enjoyed learning more about it. After
extensive searching, I have been able to find a few recipes which
feature huauzontle:
Filete de Res al Huauzontle (Filet of Beef with Huauzontle)
http://www.mexicodesconocido.com.mx/espanol/cultura_y_sociedad/gastronomia/detalle.cfm?idpag=410&idsec=18&idsub=88
Supremas de Huauzontle (Huauzontle Supreme)

Tortitas de Huauzontle (

If you are looking for an extensive collection of recipes, here are
two books which profess to include Mexican recipes using many native
ingredients, and specifically mention huauzontle.
Quelites, Un Tesoro Culinario - Linares, Edelmira y Judith Aguirre (Eds.)

From My Mexican Kitchen - Diana Kennedy

Since huauzontle is somewhat similar to broccoli, I'm also including a
few Mexican recipes which include broccoli (although I know they
aren't as authentic, and may not be what they are looking for).
Broccoli Quesadillas

Deep Fried Broccoli, Mexican Broccoli Dip, Broccoli & Smoked Trout

Hopefully, these recipes are what you were looking for. Happy Cooking!
Regards,
inquisitive-ga
Search Strategies:
"aztec spinach"
"huauzontle ingredientes"
"huauzontle recetas"
Plus, Google Language tools to help me with the Spanish/English
translation since I, unfortunately, don't speak/read Spanish very
well. |

Hi -- I'm not really looking for clarification, just wanted to thank
you for such a good answer! The addition of the cookbooks, with web
sites, especially the one specializing in quelites was really great
and very thoughtful. (I already have Diana Kennedy's). I've eaten
huazontle a couple of times in Mexico, and seen it in the markets, but
this will help significantly.
By the way -- to me, at least, it's not really very much like broccoli...
