I am looking for recipes for a vegetable used in Mexican cookery
called huazontle, also known as Aztec Spinach.  Spanish language
websites are OK.

Thank you so much for this interesting question. I had never heard of
this vegetable previously, so enjoyed learning more about it. After
extensive searching, I have been able to find a few recipes which
feature huauzontle:

Since huauzontle is somewhat similar to broccoli, I'm also including a

aren't as authentic, and may not be what they are looking for).

Hi -- I'm not really looking for clarification, just wanted to thank
you for such a good answer!  The addition of the cookbooks, with web
sites, especially the one specializing in quelites was really great
and very thoughtful.  (I already have Diana Kennedy's).  I've eaten
huazontle a couple of times in Mexico, and seen it in the markets, but
this will help significantly.

    By the way -- to me, at least, it's not really very much like broccoli...

Dear mmaguire-ga,

I've never tasted huauzontle, but I didn't think it probably had all
that much in common with broccoli. I felt bad that I couldn't find
more recipes, however, so threw those in as alternatives.
