Am looking for a hand-held, cordless, battery powered, two-speed
electric whisk. This is as close as I could come, though it's lacking
the cordless/battery powered feature:

No, because from what I can tell, none of them has a whisk attachment.

I'm afraid the Bonjour whisk is too flimsy and the price for the
Dynamic whisk boggles the mind. Can't believe that a major brand like
Cuisinart or Krups doesn't make exactly what I'm looking for!

You're right. That "whipping" attachment on the Cuisinart model is not
a whisk per se. Perhaps the configuration I seek does not exist.

Another kitchen gadget I've long sought, but with no success, is a
remote reading meat thermometer that can be embedded in a roast WHILE
it's rotating on a gas grill rotisserie. Such a device would have to
transmit the temperature signal through the heavy grill cover. It
could use no wires, as such would become entangled during rotation.

The Cuisinart product states that it has a "Whipping Attachment."

Here's the manual and I don't think that the Cuisinart product
whipping attachment is what you're looking for.
