As recently as four years ago, there were some positions advertised on
MipMap.com (PlanetRecruit.com now) for fruit machine manufacturers:

C/C++ Graduate trainee developer - Oldham, Lancashire (Oldham, Lancashire, North

C/C++ graduate required for trainee development position within this
well established fruit machine/games company. MUST HAVE SOME I.T
RELATED COMMERCIAL EXPERIENCE. Excellent cross training with leading
edge technologies.

Found those on groups.google.com, searching for fruit machine software.

This isn't much of a comment, but I'd suggest looking over (or
calling) some of the following companies, checking for programming
positions (none had remarkably pertinent vacancies when I looked):

1. JPM Group http://www.jpm.co.uk/
  a. http://www.jpmsupport.com/~ace-coin/html/careers.php
  b. http://www.jpm.co.uk/jpm/ (click on company, then careers at JPM)

2. Empire Games
  a. http://www.empiregames.co.uk/vacancies.htm
    i. They also have a "tech" link for "Technical information and
software downloads," but you need to give them some contact info.

3. Barcrest Games
  a. http://www.barcrest.co.uk/jobs.htm

4. Global Games
  a. http://www.global-games.co.uk/newsletter.htm
    i. Not an employment link, but you can receive a newsletter with
all the "latest technical information."
  b. http://www.global-games.co.uk/tech.htm
    i. Similar.

5. Bell-Fruit Games
  a. http://www.bell-fruit-mfg.co.uk/team.htm
    i. Another contact link
  b. Mazooma http://www.mazooma.co.uk/vacancies.htm

Sadly, I couldn't find much on Maygay Group (who also owns Impulse
Games and Extreme Gaming), but there are contact links:
http://www.maygay.co.uk/index.shtml

Nor could I find much on QPS Interactive, other than that they're
owned by Bell-Fruit (see above): http://www.qps-interactive.com/

Most fruit machine programmers programme in either C or C++, with some
assembler thrown in. This is usually either 6809-based or 68000-based.
I have heard that some companies have used fortran, but this is rare.
