What's the name those pictures, which is composed by a bunch of
pictures with similar color on that pixel? Like those Disney art, a
picture of mickey mouse which is actually assemble by lots of other
disney pictures. Any software can make that?

The types of pictures you are talking about are called a variety of
things depending on whom you ask. Some refer to them as photo tiled
pictures, photo tapestries, or photo montage pictures, but by and
large I think the vast majority of us know them as ?photo mosaics?:

Here?s one (a really neat one too, I might add) that is referred to as
a ?photo montage? simply because of that happens to be the name of the
software used to make it:
