What good arguments are used to defend not including caloric values of
food items in restaurant menus?

Rwstaurants are just that, restaraunts and NOT nutrition centers.
 
Restaurateurs are just that, restaurateurs and NOT nutrionists.

Accuracy in caloric values cannot be guaranteed in a restaurant
environment, unless you are simply microwaving pre-packaged foods, in
which case you are no longer a reputable restaurant but a microwave
center.

Cooking is an art, not a science!!! If you're practicing this art, you
cannot guarantee the same, exact result every time you serve a
specific dish. Hence, you cannot guarantee the caloric values on your
menu.

A restaurant is a place of leisure more than it is a place of calorie
ingestion, and most of us don't want to know! If your customers were
REALLy concerned about caloric intake, they would not be frequenting
restaurants!

Menus should be aesthetically pleasing. These numbers get in the way
of that pleasure.

If you include caloric values, then you're going to have to include
fat, fiber, sodium, protein...and really make a mess of the menu.
