Dear Corny,
Pacific Rim cuisine is a term describing food prepared in styles
popular to, well, the Pacific Rim area. However, since the Pacific is
a huge area, with different types of cuisines and inspirations, it is
in fact an "inventive", "fusion" cuisine: "It blends flavors of the
Pacific islands and the Orient with a dash of California freshness and
Southwestern spice. You'll find noodles, potstickers, seafood tacos
and chimichangas." (SOURCE: Sadie Jo Smokey "Pacific Rim cuisine" The
Arizona Republic, May. 22, 2002, AZ Central,
<http://www.azcentral.com/home/takeout/articles/0522takeout22-CR.html>).
And here is another description:
"The idea of Pacific Rim cuisine began taking shape about 10 years
ago. It can be several things, but it is never merely a transplanted
ethnic cuisine. Instead it is an unpredictable culinary reflection of
California's ethnic mix. Typically a chef or souschef may be Chinese
or Japanese and many have trained in France or Italy. He or She may
mix several Pacific traditions into what could be called a pan-Asian
cuisine, or perhaps add just a few Far Eastern touches to American or
French dishes." (SOURCE: Duffy Martha. "Spicy Blend of East and West"
