I'm looking for a reputable professional knife sharpening service,
preferably in Atlanta, GA.  However, the person or company needs to be
experienced with Global brand cooking knives, as Global blades are not
sharpened at standard angles and depths.  In other words, I don't want
to send my cook's knife somewhere unfamiliar with Global knives, only
for it to be ruined.  Being located in Atlanta is definitely
preferred, but I'd be okay mailing it off for a few days if necessary.

As you have some (nice!) knives that are bit unusual, I emailed them to
make sure that they could handle them properly, and they assured me that
their knife sharpener, Eric Edges (no, I am not making that up...), works
on Global knives on a regular basis.  They also assured total satisfaction.

Some additional info:

Sharpening is done in-store at the midtown location on Tuesdays and
Thursdays; it is done at the Brookhaven location on Wednesdays.  It's
$3.50 for a straight-edge knife.
