Obscure 80's series.  May have been cancelled quickly.  One of the
characters is a hologram.  One qoute (by the hologram) I remember is
"I don't drink", then being offer food says "I don't eat, either."

This is just a shot in the dark, but could you be thinking of Quantum
Leap which featured Dean Stockwell as a hologram?

Male.

Could it be "Out of This World"?

The story as it was involved Evie, a half-human half-alien girl who
had a father called Troy who we never saw as he was away in space
somewhere and only communicated via some kind of alien crystal device
that Evie kept by her bed which acted as a radio.

I think it might be "Automan" - a series about a crime fighting
hologram played by Chuck Wagner. Automan, created by Glen A. Larson,
was originally aired on ABC (American) from December 15, 1983 to April
9, 1984, and lasted only 13 episodes.

(Out of This World was also a cute show, which I am embarrassed to

I think if may be the one Jackburton posted.  I recall the show, and
at least one of the programs took place in Vegas.  When the hologram
went past or went through the one armed bandits in the casino, they
began dumping out money.
