Consider the trade marks and logos used in motorsport. Do the
organisations in question own them? If not how does it obtain the right
to use them?

I will assume from your spelling and terminology that you are in the
UK, yes?  It would be most helpful if you could provide a few
examples.  Do you mean, for example, the term "NASCAR"?  In the US,
"NASCAR" is a registered trademark belonging to the National
Association for Stock Car Auto Racing, Inc.  So yes, in that case, the
"NASCAR" mark is owned by NASCAR.
