maxinternational,
Unfortunately, although my pick does not currently reside in Japan,
there is no one person whom I can point you to that stands out above
the rest as the God or Goddess of Sushi in Japan that can top the
notoriety of former Iron Chef Masaharu Morimoto.
You can read his biography on his web site at
http://www.chefmorimoto.com/biography/biography.htm to find more
information on his exceptional life story that lead him from being an
aspiring baseball player in his hometown of Hiroshima to becoming the
famous and talented sushi chef that took on all comers on the
television show "Iron Chef". This show would eventually be shown in
America on the Food Network, easily making him the most famous
Japanese sushi chef of all time.
Unfortunately, the contact section of his website does not seem to be
working at this time, but you may contact Mr. Morimoto courtesy of his
restaurant business in Philidelphia at:
Morimoto Restuarant
723 Chestnut Street
Philadelphia PA
Phone : 215.413.9070
Fax : 215.413.9075

On a personal note, the greatest sushi _I've_ ever eaten was this
summer at the sushi counter of the Restaurant Sawa at Hotel Alivila in
Okinawa, Japan:

I highly recommend it if you're ever in the area!
