If I brew coffee in the morning @ 7.00am & bring it to work in a
stainless steel open top thermos, will the Skim Milk spoil or curl by
5.00pm the same day or is the coffee still good to drink?  There are
approx. 14 oz. of coffee, 2 oz. of skim milk, & 2 teaspoons of sugar.

Consider meats, fish, poultry and dairy products that have been held
in the Danger Zone for two hours to be spoiled.

No it should not spoil. My dad drinks coffee and it lasts him all day.
He is fine. I would say that it may not taste so good.

If it has milk and sugar added it is not coffee.

NO. it does not. spoilage comes from bacteria; not with passage of time; 
within limits of course;)

further, since thermos is in office environment; temperature controlled; 
gradual temperature decline are through out thermos itself; unlike
heated environment as with construction worker;

problem with stainless steel thermos is that it ruins taste; if you
are Connoisseur because tannin in coffee reacts with stainless steel;

i often wondered why there are no ceramic coated (inside) thermos;
short of adding weight concern; (maybe i should invent them:)
