I have seen a lot of pictures, where wheelmen are sitting on their
highwheeler bicycle, e.g.:

How these photos were made? Were these cyclists standing, or was
something hidden behind them, or were they riding so slowly, that the
picture could be taken?

Most turn of the century cameras were not very well suited for
capturing moving images in still photos, if not completely incapable.
In the photos you showed us the cycalists are clearly holding hands
and supporting one another. As such, they become a well balanced, many
wheeled vehicle that stands alone. The subjects in the early photo are
most likley motionless because of the limitation of the camera taking
the photo. The subjects in the color photos you showed us could very
well be moving in tandem but it is unlikley. Consider these photos in
which stationary objects appear between them or in their path:

People and luggage in their path

balance yet his stationary bicycle is not:

It can only be assumed that in these particular photos at least, the
subjects are stationary and balancing with the aid of one another.
