I have an Australian friend who uses 'shorbe' as his screen name.  He
will not tell me what 'shorbe' means, only that it is "obscure". I
can't seem to find a definition anywhere.

I have found one meaning for you - food related and not in English - could it be?

No, I am sure that's not it.  That was the first thing that I found as
well (an Indian soup, or something, I can't remember for sure), but I
asked, and he said that wasn't it.

My guesses are that it is something philosophical (he was a Philosophy
major at Uni), or even possibly some kind of Australian slang.

FWIW, the word, with different spelling means "soup" in: 
- Romanian
- Turkish
- Hindu(?) - not sure about this one, but I found what you had online. 

I wish you success in finding the "real" answer. I didn't find any other meaning.

Possibly :

Shorbe -> Shaw Be -> G Bernard Shaw -> Pygmailion -> Eliza Doolittle

Unlikely, but an interesting possibility.
And possibly a compliment.
