I'm posting this as a comment, because the issue of which side to use
varies from fire blanket to fire blanket, and I wasn't sure if that
would be enough info for you.
Fire blankets are primarily used for kitchen fat fires; they should be
used on people only when the drop and roll method doesn't work, since
they may make heat damage to the skin more severe.
To use a fire blanket:
Remove it from its storage case
Grip the two straps attached to the blanket, or cover hands with the blanket ends
Hold it at arms length
"Place the blanket carefully over the vessel (e.g. frypan) to contain the fire;
The source of heat (e.g. gas ring) should then be turned off and the
fire blanket left in place until cool and the fire brigade called."

If a person is on fire, wrap them in the blanket and roll them on the
ground. In any case, don't remove the blanket until it's completely
cool. Fire blankets should only be used once.
It's also an excellent idea to read and be familiar with the
instructions on any fire blankets at your home or workplace.
