How does online payment processing service charge credit card? How can
it make sure that credit card is valid? Why does some payment
processor requires only my name and my credit card, other requires my
name, my address and my credit card verification number?

read this

1. The customer places an order with the merchant via a website, call
center, retail location, or wireless device.
2. The payment gateway receives the transaction via the Internet,
securely encrypts it, and submits an authorization request to the
customer's Credit Card Issuer to verify both the account and funds
availability.
3. The authorization (or decline) response is returned via payment
gateway to the merchant. Round trip this process averages less than 3
seconds.
4. Upon approval, the merchant fills the customer's order. 
5. Payment gateway sends the settlement request to the Merchant Account Provider. 
6. The Merchant Account Provider deposits settlement funds into the
merchant's account.

Some (most) processors have higher level of authentication and hence
also need your address (for Address Verification)and card verification
(cvv2,cvc2 info:3 digits on back of your card, 4 digits for amex)
