It's basically a numbers trick.  If you look at the chart on the right
the same icon is used for any number that's a multiple of 9, and
whatever number you pick will always result in a multiple of 9.

To use their example 23 : 2+3 = 5 : 23-5 = 18 which if you divie by 2 will give 9

Some more examples:

78 : 7+8 = 15 : 78-15 = 63 : 9x7 = 63

12 : 1+2 = 3 : 12-3 = 9

54 : 5+4 = 9 : 54-9 = 45 : 5x9 = 45

Part of how the trick works is that each time you pick a number it
changes which icon displays for the multiples of 9.
