homedmade tomato salsa. can it ever go bad, as homecanned tomatoes can? this salsa made with red or green tomatoes, vinegar, oil, garlic is refrigerated. can it ever produce deadly bacteria as the homecanned tomatoes do? because of the vinegar can it be refrigerated indefinately? |

Much to my surprise, mold grew on some of my homemade salsa. The salsa was stored in the refrigerator, and was about two weeks old. |

Call me weird, but I have eaten the moldy stuff... Well, after removing the mold. Tasted fine. Lots of vinegar, which is an acid will protect it against many nasty little creatures. I have some homemade chutney in the fridge that is over two years old and still tastes fine. |
