why are the names of most law firms in capital letters?

They're actually not.  They are typed in lower case (except forthe
first letter) and the font makes the lower case letters look like
upper case.  Many firms use the Engravers Gothic font.  This is just
for letterhead.  In other text, the firm's name would appear in normal
case.
