Hi,
Two part question. I would like to insert page numbers in the format
of "Page 1 of 8" and next "2 of 8"... and so on.

Also, how do I create a document such that I can have "date" at the
lower right hand corner at each page (except the first) and/or a fixed
information (say email or address) at upper corner of each page?

Go to View - Header and Footer.  Choose Insert Auto Text Page X of Y
for Page Number 1 of 2 etc.  For the date choose the insert date
symbol.  Hope this helps.
