Drinking too much alcohol increases the risk of hyperuricemia because
it interferes with the removal of uric acid from the body. However
most of the alcohol in wine evaporates when it is heated - as in
cooking. So it should be OK to use wine in cooking as long as the
cooking involves heating (ie not nips in desserts etc).  Good Luck.
