I was hoping to find an answer to a minor but irritating default
setting in Visual Studio.

When you drag a stored procedure or UDF from the Server Exporer window into
a data project VS opens the Generate Create Scripts dialog.
On the Options tab there's a "File Options" section that has three "File
Format" radio buttons. I'm trying to figure out how to set the default radio
button to "Windows text (ANSI)" instead of the current default for Unicode.
