Should the salt shaker be the one with 3 holes or should the pepper
shaker be the one with 3 holes?  The current set has one with 1 hole
and the other with 3 holes?
I have heard different opinions. Which one is correct?
Please provide evidence for this.

Unfortunately, there?s no right or wrong answer to this question.
Although many of us grew up believing that salt went in the shaker
with fewer holes, and pepper went in the shaker with more holes?-many
of us also grew up believing the opposite. Here are the two?-equally
acceptable?-theories:

It?s about FLAVOR: Salt goes in the shaker with more holes because
people use salt in larger amounts. In a stroke or two, you can get the
amount of salt you desire. Since most people like less pepper, the
pepper goes in the shaker with fewer holes. In one shake, you can get
the amount of pepper most people desire.

It?s about FLOW: Pepper goes in the shaker with more holes because
it?s of a coarser consistency than salt. This ?equalizes? things; a
single shake of pepper, then, is about equal to a single shake of
salt.
 
Reportedly, the latter theory is the one espoused by The International
Guild of Professional Butlers-?the experts on this subject, if there
is such a thing as experts on salt and pepper shaker holes.

One might think that you could consult salt and pepper shakers that
are marked ?S? and ?P? and find a conclusive answer. But alas, there
appears to be no standard even in among the manufacturers of shakers.

So there you go. You are right. An your friends are right, too. How
often does that happen? :)

Although I didn't pay much and I am happy with the answer.
I think the researchers should be more technical in their speech and
provide the evidence scientifically (if they can).
