I NEED A BOOK THAT'S ALREADY WRITTEN ON COOKING....LOW COUNTRY COOKING
IN PARTICULAR IF POSSIBLE.  I NEED SOMETHING THAT IS NOT COPYWRITED OR
THE COPYWRITE HAS RUN OUT OR THE AUTHOR WILL SELL ME RIGHTS TO PUBLISH
UNDER MY NAME.  THANKS..RANDY

Randy,

Since cookbooks aren't my field, I'm not locking this question. I hope
one of the Researchers who really knows about this kind of thing will
post an answer for you. If you don't get an answer in a few days, I'll
be glad to take another shot at it and post my findings.

Regarding your question (in the Comments section) about the dessert
cookbook: it is not under copyright, so anyone can reprint it. I think
we can assume that Miss Leslie is long gone, since the book was first
printed in 1832.

Regarding out-of-print books, some of them may still be under
copyright, but in such cases, writing to the author and/or publisher
is certainly possible once you get hold of the book. It's hard to find
proper contact information online, so you might need to buy a physical
copy of the book to learn who to contact regarding republication. Some
of the out-of-print books listed by Foodbooks.com are very, very old,
and long out of copyright.

could you please define what you mean by "low country" ? In Europe
that would mean the Netherlands.

Hi Randy~

I collect out of print cookbooks, so I might be able to help you :) 
Could you please specify what you mean by "low country?" Also, many
copyright free cookbooks are older...and older cookbooks tend to be
out of date in their instructions. (For example, they might assume the
cook is using a wood stove, or have measurments that aren't typically
used today.) Would such cookbooks still be useful to you?

It doesn't appear that any expert on public domain cookbooks is going
to come out of the woodwork, so I will post an answer to this myself.
I've reposted links from my earlier remarks in the 'Comments' section,
with some additions.

I've been browsing through public domain sources such as Project
Gutenberg, looking for old cookbooks and recipes. I did find a very
nice public domain cookbook that is entirely about desserts. It's
called "Seventy-Five Receipts for Pastry, Cakes and Sweetmeats, by
Miss Leslie." It is not copyrighted. Although it was published in
1832, it would not take much rewriting to turn this into something
publishable:

I found a site with a long list of used and out-of-print cookbooks
that are for sale. You might look through the list and see if anything
strikes your fancy. One of them caught my eye:

Atlanta Cooks for Company. The Junior Associates of The Atlanta Music
Club. 1868, Second Printing. Sprial. 303 pages.  Excellent condition.
Stock # 000850. $14.00

Here you'll find a long list of booksellers who carry out-of-print
cookbooks. It might be worth your while to write to some of these
folks to see whether they may have something with a low country
emphasis:

A book that's out of print is not necessarily in "the public domain"
(meaning that anyone can reprint it without requesting permission or
paying a fee). There are certain guidelines about whether a book is in
the public domain, according to the year it was published and
(sometimes) whether or not the copyright was renewed. If the book is
not in the public domain, you would have to contact the author or the
author's estate for permission to reprint the book...and you'd almost
certainly have to pay them a fee.
