I am looking for the total number of company insolvencies
(bankruptcies) in France for 2003, 2004 and 2005. I am looking for the
figure on its own, and as a percentage of total number of registered
companies.

Here are a few of the websites I have been using until now:
Insee (French Governmental statistics website):

Eurostat (EU Statistical resource): http://europa.eu.int/comm/eurostat/

OECD: www.oecd.org/

Any help is much appreciated, please don't hesitate to ask if there's
anything unclear about my question,

Hi Coltas

I know you have been to the site but just in case you missed the documents
there is a listing of insolvencies (Défaillances) at
http://www.insee.fr/fr/ffc/chifcle_fiche.asp?ref_id=NATTEF09104&tab_id=163
It appears the figures for 2005 have not yet been released.

Clicking on the icon next to 
"Télécharger les données (série depuis 1993 au format XLS : 4 Ko)"
will give you the figures for 1993-2004 inclusive in XLS (Excel) format.

Clicking on the icon next to "Afficher le graphique associé" gives a
graph of company creations and liquidations for the same period.

There is a breakdown of insolvencies by economic sector including a
link to an XLS for 1991-2004 inclusive at:
http://www.insee.fr/fr/ffc/chifcle_fiche.asp?ref_id=NATTEF09111&tab_id=170
