Products: GN9120 soundtube headset + GN8110 USB adapter.
Problem: These products are available (approx US$200 + US$60) fom
several online suppliers in the USA, but none I've located will take
orders from / ship to Australia.
Is there a supplier who willl ship to Australia and/or some"halfway
house" in the USA that will organise for me?

I've looked at Freight Forwarders - but these all seem better suited
to commercial operations rather than a one-off personal shipment -
maybe I'm missing something though.

There are a number of companies that can handle such order for you. 
Search Google for "Shipping to Australia", what you may need to
mention in your email to them is that you can transfer the money to
them in advance, or via paypal.  This way, they know that they're
getting paid.  Try www.ciilax.com, they special in South East Asi,
including Australia. you may also try www.homeshipping.com, they offer
similar service.  They may also charge you a 5-10% handling fees,
depending on you work with.  good luck
