How do you make clear ice? I own several restarants and want to make
clear ice moulds. I have seen some ice blocks that have hollowed out
channels in them that alcohol is poured threw to cool it down, it is
then captured in a glass that sits within a cavity of the block. The
block size is about 2ft x 2ft x 8in deep. I have availability to make
custom anything.  Thanks......Cam

The key to get clear ice is slow freezing, just like what happens when
icicles form. When freezing is too quick, air bubbles can get trapped
in the ice and/or pressure builds up in the ice and causes it to
fracture, hence the white cracks that you can see in typical ice
cubes. Slow freezing is the key.

I don't know if this is true - but it popped into my head as I read
your question.  Boil the water first.

Two things - clean water, and freezing such that air bubbles are
removed from the ice as it forms.
Your freezer may work if it allows you to do this.  A couple of links

Given your restaurant biz I guess you want to make some ice
scupltures.  You may find the approach described in the second link
the most practical if you have a sufficently large freezer.

like people said earlier, you need slow freezing
to do this freeze the water in an insulated container, such as a thermos or cooler.
