I was watching Karate Kid 3 the other day (don't ask), and I like the
look of the move that Daniel did during the last ten seconds of the
match.

What is the name of this move/kata, and where can I find info on how
to do it?

It is the Korean Martial Art called Tang Soo Do.

The forms you are interested should be available at this site:

Each TangSooDo form is demonstrated in a short video by the expert.

I did not review them all, so I'll treat this as a comment rather than an answer.
Hopefully, you will find the form(hyung) in which you are interested at this site.

Tang Soo Do has associations all over the world including the United Stats.
