Another breakthrough for trout producers is the new natural way of
producing astaxanthin. Astaxanthin is the pigment used to get the
orange color into trout and salmon flesh. Just last year, trout
marketers were forced to label their product as containing pigment
additives for color enhancement. With this new process, a fermentation
using a strain of yeast, no special labeling will be needed. What is
even better is that this product (Aquasta tm) has already been
approved for use in foods in the United States.
