My colleague owns an Apple laptop (OS X version 10.3.5) and has just
purchased an i-Mate
JAM. Can you please advise us which program he needs to be able to
used the ActiveSync facility on the i-Mate?

There are some 3rd party applications that can enable synchronisation
between i-mate /ActiveSync devices) and Mac OSX but they are not full
featured

The best option is to install Microsoft Virtual PC and then install
the ActiveSync program that came with the i-mate. Then you get the
best of both worlds!
