I am looking for a recipe for the drink called a "Fantail", made at a
tiny bar on the island of St. Croix, USVI, more than 10 years ago.  It
is supposedly a difficult to find recipe, and I have an idea of some
of the ingredients, but I need the exact ingrediants and the amounts.

I used to live in the VI- on St Thomas though- and I looked "Fantail" 
for St. Croix.

Hoever after calling directly and then USVI information- it appear
that the Paradise Sunset Beach is no longer in business- at least not
under that name or phone number (which is not surprising if you were
there 10 years ago.)  However- if you are serious about finding the
recipe- you may want to call another hotel or Bar- (there's a link to
those from the aboove site) and find out the fate of the Paradise.  It
may still be there- but with a different name- in which case it may
have the same drink special.  Otherwise- your next bet- which is
longer shot- is to find out where the bartender went.  My experience
from being a native for many years is that bartenders move around a
bit.  If the Bartender was a local- I bet anything he or she is still
bartending - just somewhere else.  If the bartender was from the
states or somewhere else- they may not be there anymore- since these
people are much more transient.  but honestly- a few well placed calls
telling them exactly what you are trying to find will probably get you
what you are looking for. the bar community on each of the islands is
very tight nit and small.  Also- be exceptionally polite  and think
about when you call- slow bar times- and it will go a long way with
the locals.  Good Luck.
