I want to build a small underground French style wine cellar for
storage of wine, and preserves such a bacon & ham.  Wish to have a
stone lined convex roof.

Check past issues of Fine Homebuilding magazine. I seem to remember an
issue that dealt with just what you are asking for in the mid 80s
(1984?)
