I've seen a lot of job postings that say compensation is "DOE". What
does this stand for?

I this context. "DOE" means "depends on experience"  or "depending on experience."


The Google search linked below returns over 3,500 hits for the search
term combination of "doe" and "depends OR depending on experience." 
Virtually all of those hits involve the use of the acronym "DOE" in
the context of your question:

salary OR compensation doe  "depends OR depending on experience"
