My wife and I are renewing our wedding vows in Fiji in September and
we need some help with the planning.  Keep in mind that we travel as
airline employees and thus are usually granted discounts of up to 50%
on lodging, although not always.  We have air transportation covered
to Nadi, Fiji so this can be omitted from the planning.

We will be arriving at Nadi on September 5, 2002 and departing on
September 14, 2002 (10 days)  We are planning to re-marry on Saturday,
September 7th (our anniversary), on a west-facing beach at sunset.  We
anticipate that this will occur at the resort where we are staying. 
We would like someone to coordinate getting our license, a celebrant
to perform the ceremony, a Fijian warrior escort during the ceremony, and
a photographer (these seem to be part of the usual wedding packages
offered at many of the resorts).

We are looking for a really “special” waterfront resort, with air
conditioning, queen size bed or larger, and access to good food.  We
would also enjoy snorkeling and jet skiing.  Here may be the difficult
part of this project --- during our stay we would like to have access
to a private island, possibly for a one day rental at a nominal price,
so we can conduct some, shall we say, honeymoon type activities without fear of
showing up on the internet.  Also, any unique, romantic ideas for this
trip would be great.

We would like to pay around $100USD per night, per room (remember,
that would be after our airline discount), and probably around $400USD
for the wedding package.   If it wasn’t for the ring my wife wanted we
would probably stay at the Vatulele Island Resort.  Instead, we have a
budget more in line with the Outrigger.  I would just like to see if I
could make this occasion a bit more special given our small budget.

Wow!  What a wonderful idea.  Congratulations on your anniversary, I'm
sure you'll have a great trip.

There are many, many resorts offering the services you requested,
although perhaps not within your budget.  I have found a number of
smaller resorts that offer the features you mentioned, and for a
reasonable price.  I think the pick of the lot is the Lalati Resort:

This resort even has a specific "Renewal of Wedding Vows Package"
Comprising of:

"Gazebo colorfully decorated with unique tropical flowers
Salusalus (floral leis) for Husband and Wife
Officiating Minister for Christian Service (or Non-denominational,
Civil)
Reception
Champagne, wine or rum punch for all Lalati guest attendees
Hors d’oeuvres
Lovo Fijian Feast
Meke, a Joyful Fijian musical celebration"

This ceremony is priced at USD$600, which is maybe more expensive than
you were thinking... the Lalati Resort does fulfil your other criteria
(it is especially noted for its good restaurant) and accomodation is
priced at USD$195 per night.  They also offer the 'island for a day'
picnic, although no price is listed on the website, it sounds
wonderful.

"Just a 5-minute boat ride from Lalati is Storm Island, a beautiful
uninhabited island. This is a small private escape, available for
couples from Lalati to enjoy. This is the perfect spot for a private
picnic for two, as well as a place to enjoy snorkeling and
beachcombing for shells."

Tokoriki Resort looks beautiful too, and offers tailored wedding and
vow-renewing ceremonies... AND a Honeymoon Island Picnic similar to
the Lalati one mentioned above.  Unfortunately, the website does not
list the resort’s prices.

Musket Cove Island Resort sounds terribly nice, and the wedding
package seems very flexible; you only pay for the options you choose. 
The accommodation looks great too, and within your price range of
USD$100 per night.  There is no mention of a private island,
unfortunately!
