Does anyone know if a software program exists, that can create
notation from "hearing" sounds entered into the computer via a
microphone? like for example, if someone were to sing the notes?

I'm glad to have been able to assist you in finding the kind of
software you're seeking. I have reposted the link below.

Wildcat Canyon Software: Autoscore

Here's another possibility:

Aspire Software: Music Masterworks
http://www.musicmasterworks.com/

My Google search strategy:

Google Web Search: "sheet music" OR notation "sing into"

I hope this helps!
