I read a book in the late 1970s -- it was probably published in the
1960s or early '70s -- about a mouse who is kidnapped by a rich man
who loves cheese. The mouse ends up rescuing the rich man from a dark
tunnel. Any idea what the title of this book was?

Here's a description of a book first published in 1967:

"When Patrick mouse is kidnapped by a millionaire who collects mice,
he manages to save the millionaire's life and is handsomely rewarded.
From there he buys a boat, is lost in the Atlantic and ends up
involved in the pursuit of two fat rat jewel thieves!"
