When spyware is removed and you type something private on your PC
without internet connection, the next time you get on the internet and
spyware is added again, can they intercept what you have typed in
between those two periods?

the answer is a bit complex.

No, they can't see what you typed when there was no keylogging spyware
installed based on that software which was removed, but Yes, they may
be able to see what you typed or what sites you visited if you become
infected again and the information is in a cache or some other cookie.

Can you be more precise as to what you would consider an acceptable answer?

When you say the spware is removed are you sure it is. Often times
these parasite programs will remain on your pc even though you might
not be able to find them anywhere. Your best bet is to run a scan from
one of the many spyware packages out there at present. This will tell
you what type of spyware is on your pc. Here is a link to one that
will scan your pc free http://freespyware.1st-in-bargins.com.
