To clarify: the list does NOT have to be exhaustive.

Would this list meet your needs?

Yes it would. I'm hesitant to take that list on the authority of the
Everything site, but I can verify each of the species on that list on
my own easily enough, so this list serves the purpose. You came
through just in time, too! I'm meeting today with some other UCLA
students from the Environmental Bruins club and one of the projects
we're going to work on for Earth Day is creation of tombstones for
extinct species. Thanks Pink Freud.

I'm glad I was able to find a list that will be useful. I've reposted
the link below, with information about an additional resource that may
be of use.

Everything2: Dictionary of recently extinct animals
http://www.everything2.com/index.pl?node=Dictionary%20of%20recently%20extinct%20animals

After I posted the Everything2 link for your perusal, I came across
two very extensive databases of recently extinct species of mammals
and fish. This may be more info than you need for your current
purposes, but it is quite interesting (not to mention dismaying).
There are hundreds of species listed here. The status of their
extinction is listed as "Resolved," "Unresolved," or "Disqualified,"
with brief explanations of the status.

In order to download these databases (in the form of zipped Excel
files), you'll need to fill out a brief registration form with the
Committee on Recently Extinct Organisms. Registration is free.

Here you'll find information about the CREO Extinctions Databases:

Committee on Recently Extinct Organisms: Database Initiatives
http://creo.amnh.org/pdi.html#dbases

I hope this helps. If anything is unclear or incomplete, please
request clarification; I'll gladly offer further assistance before you
rate my answer.

Best regards,
pinkfreud

I had meant to include this in my answer, but accidentally omitted it.
The Committee on Recently Extinct Organisms has prepared an excellent
list of resources that you might find to be of use:

And here are some tips on research from the CREO site:
